Meatloaf
I'm probably the only person under 50 that cooks meatloaf these days. It's sort of old-fashioned. But, just in case you like meatloaf...did you know you can cook it in the microwave? It only takes 15 minutes compared to baking for an hour or longer in the oven. Just mix your meatloaf as usual (I use 1 lb. ground beef, an 8 oz. can tomato sauce, 1-2 TBS minced onion, about 6 broken crackers, TBS dried parsley, one egg, salt and pepper...all mixed together.) Use an 8 or 9 inch square glass dish with a small round glass dish of some kind in the middle. Fill in around the small round dish with meatloaf and pack it down. The small dish keeps the middle open and helps it cook faster. Cook for 15 minutes on high in the microwave. That's it. I was sceptical when a neighbor told me about this, but I am glad I tried it. It saves a ton of time.

I'm old fashioned, too. I cook meatloaf often & we all LOVE it! However, I've never tried it in the microwave. I'm having a hard time believing that it comes out moist. Or, I guess that's what the cup of water is for ?? Did it taste the same?
