Easy Chicken

I did something for the first time this week and I can guarantee it won't be the last. I have no idea why I've never tried this before because it was so easy. I bought a whole chicken. I put it in the crock pot, added salt, pepper, and 1 cup of water. I meant to put it in before I went to bed so it would be done in the morning, but I forgot and had to cook it all day instead. Then, after 8 hours, I shredded all the meat from the chicken and put it in a Tupperware. It made about 4 or 5 cups of meat. I used some the first day to make chicken enchiladas. I used more tonight to make a chicken pot pie. I have enough to make one more chicken dish of some kind. This would make great chicken salad or a casserole. That whole chicken only cost $3.49 and it tastes so good after being slow cooked. After I cooked the chicken, I even drained the juice from the crock pot and got 2 cups of chicken broth that I froze to use later in soups. I feel so economical! I could have been doing this ages ago. I'm so sad I just now discovered it.

ooh, thanks for the tip. I am scared of whole chickens, but I'll give this a try. I've been buying the rotisserie kind and doing what you suggested, but this would save me $3! cha-ching!

I haven't thought about that either, but whole chickens have always kind of scared me too. Not sure why. But this sounds like a great idea! I'll have to try it!

I have done that too. So cheap. I love it. I have also purchased a large ham. I came glazed and ready to cook. It took 2 hours and I had tons of meat to freeze. The ham was maybe $6-8.

I love to cook whole chickens... I usually flavor them up and eat them after slow roasting, instead of saving them for other recipes. This is definitely the way to go when you need shredded chicken for recipes! More economical, juice and very flavorful! I love the dark meat!
