Fast Meals

I have a small file of recipes stashed in my mind for nights when I don't feel like "cooking" but I still want something warm and yummy to eat without paying restaurant prices. These are quick meals that involve some "putting it all together."

None of these meals takes more than 20 minutes, and all require minimal work.

Chicken Parmesan (learned this one over a decade ago from my good friend Carrie)

Frozen breaded chicken breasts
Spaghetti
Jar of spaghetti sauce
shredded mozzarella cheese

Bake one frozen chicken breast per person. Follow package directions. (Should bake about 20 minutes.) Halfway through cooking, flip them over and place shredded cheese on top. Meanwhile, boil spaghetti and heat sauce. Layer spaghetti, chicken breast, then sauce on plate. Yum.

Tuna Melts

1 can tuna
spoonful of mayo
half a chopped apple
diced celery
diced onion
shredded cheddar cheese
2 large slices bread

Drain tuna. Mix in mayo and any of the diced stuff you have on hand. Spoon half of mixture onto each slice of bread, sprinkle cheese on top. Broil on high until cheese is browning.

Sausage Hoagies

1 kielbasa or beef sausage cut into 6 inch pieces, then sliced in half
sliced onion and or green peppers
Hoagie buns

Just toss the sausage, onion, green pepper in a skillet over medium heat until all are browned and the veggies are soft. Place in a Hoagie bun and top with mustard.
