Sopapilla Cheesecake

Let's suppose for a moment that you are making a Mexican themed dinner for guests and want something that ties in nicely for dessert.  Let's also suppose you don't have a ton of time, so it's got to be easy.  And of course, it must be delicious.

So you do a little search on google and up pops this highly ranked dessert on called "Sopapilla Cheesecake."  So let's say you buy the minimal ingredients involved in making this dessert and whip it up in about 30 minutes.

Then, suppose your guests rave about it.  Your children beg you to make it again.  You'd like to post a photo of the cute little dessert squares, but the entire 9 by 13 pan was completely cleaned out- GONE- in one evening.  And already you are planning to make it again as quickly as possible.

This isn't actually a hypothetical really happened to me.  And the dessert really is THAT good.  So do yourself and your family a favor this holiday weekend and make this dessert.  You'll thank me.

I LOVE Sopapilla Cheesecake! And it's one of the easiest things to make. Definitely a crowd pleaser!
