Good Food

I whipped up this pineapple upside-down cake this morning. It's been years since I made one!
Looks good, huh?

There's enough brown sugar on this thing to feed an army. Just the way I like it.

I also recently discovered how delicious homemade potato salad is when it is still warm right after all the ingredients are mixed together. I always had it in my mind that potato salad was complicated, but it turns out it is pretty simple. Here is the recipe I've been using. I got it from an elderly friend of the family whose mother used to make it before her. Something that's been around that long has to be good.

Potato Salad

4-5 medium potatoes, peeled and cubed
1 onion chopped
3 hard boiled eggs, chopped
2-3 TBS mustard
desired amount of mayo to moisten (I use about a half cup)
chopped sweet pickles (about 5)
salt
pepper
can garnish with a sprinkling of celery seed

Bring the potatoes to a boil in about an inch of water, then turn heat down and simmer until tender. When tender, drain in colander. Mix with other ingredients and chill. Sprinkle on celery seed before serving.

Like I said, though, it tastes really good warm. Try it!

I love warm potato salad! I use red russett potatoes and I use pickle relish instead of pickles.
Yummm! The pinapple upside downcake does look pretty. I love pineapple, but I only like it cold!

In my family the patatoe salad doesn't usually get a chance to get cold. We all eat it warm!!!!

I love the warm potato salad from Red Hot and Blue restaurants...mmmmmmm! (with red potatoes and green onions instead of pickles... not a pickle fan)

I have never tried pineapple upside down cake. Looks pretty tastey though!
