Fabulous Feast

I am so excited! I am preparing a special Easter meal for our family and Cody's parents to share on Saturday. I've always wanted to host a holiday dinner of some kind. But Thanksgiving and Christmas are always taken by someone else. Someone with a bigger house that can accommodate 3 million family members. But since we're having a more intimate gathering I figured I could handle Easter. And here is the brilliance of my plan: we're doing it on Saturday so there's no rush trying to get a meal ready after church on Sunday. In fact, on Sunday we'll be eating the left-overs from my magnificent Saturday meal. Curious to know the menu?
Okay, you twisted my arm...here it is.

Spiral cut ham (my dear friend in Seattle sent us this lovely ham as a Christmas gift.)
Mashed Potatoes
Broiled Asparagus
Spinach Cheese Squares
Pistachio Salad
Rolls (not homemade...sorry, but I am a novice at putting together a Holiday meal so I figured I better take it easy on myself.)
Deviled Eggs
and for dessert, homemade Carrot Cake

In case you hadn't noticed, I am just a little bit EXCITED about making this food and sharing it here in my home with people that I love so much. Maybe I'll take a photo of the table with all the food laid out on it and post it later. Meanwhile...I better start cleaning the house.

Yumm. Sounds like a delicious meal! I just love carrot cake! Hopefully you will post the recipe for your spinach cheese squares on your recipe blog. Have a blessed time!

That sounds great, Becky! I really love ham. And probably good thinking on the rolls - homemade is quite a task along with everything else unless you're seasoned at making homemade rolls.

Well, luckily I will get to taste each of these dishes. Making me hungry to read over that list. I can just smell those things cooking. And I had just been thinking about carrot cake so this will be a special treat. Can't wait.

mmmm... sounds like such a Texas meal! Maybe I should make one too...
