Taste of Fall

Yesterday I got the urge to cook something special for dinner. I have no idea why, but the three words that sprang to mind were butternut squash ravioli. It just sounded so good to me. The internet is a perfect resource for finding good recipes, and it definitely didn't disappoint this time. I found this fantastic recipe for Roasted Butternut Squash Ravioli with a Sage Brown Butter Sauce on Food Network. Half the fun was casually perusing the aisles at Central Market with Lucas gathering the ingredients for my dish. I bought several items I had never bought before like fresh sage and wonton wrappers. See, I decided not to make the pasta part of the dish because several reviewers mentioned wonton wrappers worked great and were much simpler. I highly recommend that route to anyone who wants to try and make this ravioli. It really is a simple recipe and they tasted....heavenly.

I also recommend doubling the filling part of the recipe, making extra raviolis, then freezing them on a tray of some kind. After a couple of hours they can be placed in a freezer safe baggie and used for a meal another day. You might as well do this because you'll have plenty of roasted squash and wonton wrappers.

I wish I could describe the flavor of this ravioli. The squash, mixed with whipping cream, shallots, and finely grated parmesan-reggiano cheese topped with pure butter and small crispy sage leaves...it was a real treat.
