Green Chicken Chili

I made the BEST chili tonight, even though I should have waited until tomorrow night because that's when it's going to be cold!  If I were you, I'd go buy these simple ingredients pronto and whip up a batch of this chili when the temperature drops.  It is so filling and absolutely delicious!

1 TBS olive oil
1 rotisserie chicken, dice all the meat
1 small onion, chopped
2 cups chicken broth
2 (4 ounce) cans diced green chilis (substitute one of the cans with chopped jalapeno if you want)
4 cans great Northern beans, 2 drained, 2 undrained
3 cloves garlic diced fine
1 cup salsa verde
1/2 TBS cumin
1/2 TBS dried oregano
TOPPING:
chopped cilantro
sour cream
diced avocado

Saute onion, green chilis and garlic in heated oil for a few minutes.  Add chicken broth and bring to a boil.  Add the cans of beans, cumin, oregano, salsa verde, and chicken.  Reduce heat and simmer at least 30 minutes, but an hour is better.  Don't forget the toppings to make it absolutely amazing!
